Shishito Tempura
Ingredients:
* 10 shishito peppers
* salad oil
* a little flour
* a little salt
Coating:
* 1 egg
* 3 tablespoons flour
Cooking Procedure:
* Wash the shishito peppers. Wipe them with a wet paper towel. Cut off the calyxes of the shishito peppers.
* To make the coating, mix the egg in a bowl. Add the flour and stir.
* Dust the shishito peppers lightly with a little flour before applying the coating. With chopsticks, dip the shishito peppers into the coating and twirl them around to coat them.
* Fill a wok over half full with salad oil and heat until 170°C. Drop the coated peppers into the wok and deep fry, turning them with chopsticks or tongs. Cook until they are a light gold color. Drain them.

* Sprinkle salt over them. Insert a stick into each shishito pepper and serve.

Sake Steamed Shrimp

* 60 ml sake
* a little salt
* Wash shrimps. Put the shrimps into a pan or a frying pan. Add the sake and salt. Cover and boil for 7 min. on medium heat.

* Serve the cooked shrimps on a plate or platter.

Broiled Tofu Bites on a Skewer
Ingredients:
* 100 g hard tofu
* 1 teaspoon salad oil
Sauce:
* 1 tablespoon white or red miso
* 2 tablespoons sugar
* 1 tablespoon sweet sake for seasoning (mirin)
Cooking Procedure:
- Wrap the tofu in a paper towel. Put on it in a tray. Place a folded kitchen towel under one side of the tray and lean the tray on it. Let sit for about 15 minutes.
- Mix the miso, sugar and sweet sake for seasoning (mirin) in a dish. Warm it in a microwave.
- Cut the tofu into bite-size pieces.
- Insert a stick into each piece.
- Heat the salad oil in a frying pan. Pan-broil both sides of the tofu pieces until they turn brown. Remove from the pan.
- Broiled Tofu Bites on a Skewer
- Pour the miso sauce over the broiled tofu pieces.

Yakitori (Broiled Chicken) Bites
Ingredients:
* 150 g chicken
* 30 cm. leek (white part)
Cooking Procedure:
* Cut the chicken into bite-size pieces. Cut the leek into 3.5 cm. long sections.
* Grate ginger. Mix soy sauce, sugar and grated ginger.
* Marinate the chicken in mixture (Step 2) for about 1 hour.
* Brown the chicken and leeks over a low flame for 15 minutes. Remove from the pan.
Yakitori (Broiled Chicken) Bites
* To form one bite, insert a stick through one leek section and one chicken piece.
Tofu and Cream Cheese Canapé Recipe
Tofu and Cream Cheese Canapé
Ingredients:
* 1/4 block of tofu
* 40 g cream cheese
* 400 ml water
* a little salt
* a little pepper
* 4 crackers
* something green (e.g., parsley, basil)
Cooking Procedure:
- Put the 400 ml of water and the tofu in a pan. Boil for 7 minutes. Drain the tofu in a colander and let it cool.
- Mash the tofu with a spoon or a rubber spatula. Add the cream cheese, salt and pepper, and mix.
- Tofu and Cream Cheese Canapé
- Place a suitable amount of the mixture (Step 2) on each cracker. Decorate with something green.

Pan-Broiled Scallops Bites
Ingredients:
* 4 scallops
* 1 teaspoon soy sauce
* 1/2 tablespoon butter
Cooking Procedure:
* Heat the butter in a frying pan. Add the scallops and pan-broil on each side on medium heat (about 5 minutes). Add soy sauce and pan-broil for another 3 minutes on one side only. Pan-Broiled Scallops Bites

Beef Steak with Cheese Bites
Ingredients:
* 60 g lump of beef
* 1 teaspoon soy sauce
* a little salt
* a little pepper
* a little salad oil
* suitable amount mozzarella cheese
Cooking Procedure:
* Sprinkle salt and pepper on both sides of the meat. Pan-broil the meat. Add soy sauce and pan-broil for another few minutes.
Beef Steak with Cheese Bites.
* Slice the meat into 1 cm. cubes. Place a suitable amount cheese on the meat. Insert a stick into each cube.
Raw Tuna and Japanese Radish Bites Recipe
Raw Tuna and Japanese Radish Bites
Ingredients:
* 30 g raw tuna
* 30 g Japanese radish
* 1 teaspoon soy sauce
Cooking Procedure:
* Slice the Japanese radish very thinly. Cut into quarters.
* Slice the tuna into 4 cubes.
* Marinate each side of the tuna in soy sauce for about 20 minutes.Raw Tuna and Japanese Radish Bites.
* Place one tuna cube on each Japanese radish quarter. Insert a stick.

* 4 shrimps
* 30 g Japanese radish
* 240 ml water
* 1/2 teaspoon soy sauce
* 2 tablespoons mayonnaise
* a little salt
* a little pepper
Cooking Procedure:
* Hull shell and devein shrimps. Boil the water in a pan. Add salt and the shrimps. Boil for 3 minutes. Drain the shrimps in a colander and let them cool.
* Mix mayonnaise, soy sauce and pepper. Add the shrimps and mix.
* Slice the Japanese radish very thinly. Cut into quarters.
Shrimp and Japanese Radish Bites.
* Place one shrimp on each quarter. Insert a stick.
